Avocado and Bacon Breakfast Sandwich

Prepare ripe avocados by slicing them or mashing them with a fork until smooth. Season with salt, pepper, and a squeeze of fresh lemon or lime juice for added zest.

Ingredients:

2 slices of bread

1 ripe avocado

4 strips of bacon

2 eggs

Salt and pepper to taste

Instructions:

In a skillet, fry the bacon on medium heat until it becomes crunchy. Remove and place on paper towel to absorb excess fat.

At the same time that you are frying bacon, grill slices of bread until they turn golden brown.

Halve the avocado, take out its seed and scoop the inside flesh into a bowl. Mash with fork until smooth and season with salt and pepper to your taste.

In case you were using a skillet for bacon, melt butter over medium heat in it (remove superfluous bacon fat if necessary). Break eggs into shillet and cook them according to your preference (over easy, sunny side up etc.). Salt and pepper can be added.

Spread mashed avocado uniformly on one side of every piece of toasted bread,

Layer spinach or arugula leaves, slice tomato, crispy bacon and cooked eggs onto one slice.

If available drizzle some hot sauce or spread some aioli onto the other slice of bread.

Then cover sandwich with second slice of bread when avocodo is facing downwards

Optionally cut the sandwich into two halves and serve immediately.
