Avocado Toast with Poached Eggs

Ingredients:

2 slices of whole wheat bread

1 ripe avocado

2 eggs

Salt and pepper to taste

Red pepper flakes (optional)

Fresh herbs for garnish (such as cilantro or parsley)

Instructions:

Begin by browning and crisping the two slices of whole wheat bread in a toaster.

While the bread is toasting, break your eggs. Fill a medium-sized pot with water and let it come to boil. After boiling, lower the heat to simmer, and prudently crack each egg into the pot’s water. Cook for about 3-4 minutes for a perfect runny yolk.

Whilst you poach the eggs, you can mix up ripe avocado in a little bowl with salt and pepper as well as lime or lemon juice squeezed on top for that extra tang.

When finished boiling break them out from hot water carefully using spoon with holes and place on kitchen towel so that remaining water comes off.

Put some mashed avocado on toasted slices of bread and place one poached egg on top of each.
