Delicious Southwest Breakfast Bowl

Begin your day with a Southwest Breakfast Bowl that is packed with various ingredients. Ingredients:

1 cup cooked quinoa

1/2 cup black beans, drained and rinsed

1/2 avocado, sliced

1/4 cup salsa

1/4 cup shredded cheddar cheese

2 eggs

Salt and pepper to taste

Optional toppings: sliced jalapenos, chopped cilantro, lime wedges

Instructions:

In a medium-sized bowl, mix the cooked quinoa with black beans. You can season it with salt and pepper.

Warm up a pan at medium heat proir to cooking eggs to your satisfaction (scrambled, fried or poached).

Separate the quinoa mixture among two bowls then add sliced avocado, salsa and shredded cheddar cheese on top.

Finally, crown each bowl with one cooked egg and any additional toppings as per wish.
