A Spinach and Mushroom Omelet is a delicious dish that combines fluffy eggs with sautéed spinach and mushrooms. It is so much more than that, however: a nutritious and satisfying omelette made with sauteed vegetables and delicate eggs cooked just right.
Ingredients:
2 eggs
1/4 cup chopped spinach
1/4 cup sliced mushrooms
1/4 cup shredded cheese
Salt and pepper to taste
1 tablespoon olive oil
Instructions:
Take a bowl and whip salted eggs.
Heat olive oil on medium burner in a frying pan;
Drop mushrooms into the skillet until they become brownish, say within 2 -3 minutes;
In the same skillet, place spinach that is chopped and then cook until it wilts for about 1-2 minutes.
Pour the blended eggs onto spinach and mushrooms;
Wait till the sides get firmed up then put some grated cheese on top of it to complete the process of making an omelette;
Make sure you fold it gently in two halves while cooking it for another minute so that your cheese can melt well and eggs cook properly.
