Ingredients:
1 tortilla
2 eggs
1/4 cup diced bell peppers
1/4 cup diced onions
1/4 cup diced tomatoes
1/4 cup shredded cheese
Salt and pepper to taste
Optional toppings: salsa, avocado, sour cream
Instructions:
Steam the green pepper, green onion and tomato in a little skillet until it is soft and marginally seared.
Break eggs into another bowl, season with salt and dark pepper to taste and whisk them together
Move the vegetables aside of the skillet, empty beaten egg combination into the opposite side, and afterward mixing ceaselessly cook until set.
