Quinoa and Black Bean Salad

Ingredients:

1 cup quinoa

1 can black beans, drained and rinsed

1 red bell pepper, diced

1/2 red onion, finely diced

1/4 cup chopped cilantro

1 lime, juiced

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Instructions:

Prepare quinoa according to package, let it cool down.

Mix with cooked quinoa, black beans, red bell pepper and onion in a big bowl.

Combine lime juice, olive oil, cumin and sprinkle with salt + pepper to a small bowl.

Combine quinoa mixture and pour dressing over top; mix.
