Creamy Corn Salad

Enriching your palate with the taste of summer is a Creamy Corn Salad which is a lovely mixture of sweet corn kernels, crisp vegetables and creamy dressing. This salad uses fresh corn kernels either grilled or boiled until tender-crisp to form a sweet and juicy base. Combine this with diced bell peppers, cucumber slices that are crunchy as well as thinly sliced red onions for a colorful and flavorful mix. For the creamy dressing whisk together mayonnaise, sour cream, lime juice (a splash) and some paprika or cayenne pepper (a pinch), to add some spice into it. Toss the vegetables gently in the dressing until completely coated. Fresh herbs like cilantro or parsley could also be used to garnish it so as to add freshness into it. It can be served chilled at barbecues alongside grilled meats, picnics or as refreshing but satisfying summer salad.

Ingredients:

2 cans of corn kernels, drained

1 red bell pepper, diced

1/2 red onion, diced

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon lime juice

1 teaspoon sugar

Salt and pepper to taste

Optional: chopped fresh cilantro for garnish

Instructions:

Mix corn seeds, dices of red pepper and onions in a large bowl.

Beat mayonnaise, sour cream, lime juice, sugar and salt plus pepper mixed well in another small bow.

Stir the dressing around on the corn mixture ensuring it is uniformly coated with them.

Put it inside the refrigerator while covered for at least 30 minutes to allow flavors to merge.

Just before serving; give it one last toss, garnish with fresh cilantro if wished then serve.

This creamy salad can also be a side dish or used as topping for grilled meats or tacos.
