Ingredients:
1 pound of button mushrooms
1 tablespoon of olive oil
1 shallot, minced
2 cloves of garlic, minced
2 cups of fresh spinach, chopped
4 ounces of feta cheese, crumbled
Salt and pepper to taste
Instructions:
Preheat the oven at 375°F.
Scoop off the stalks of the mushrooms and finely mince.
Heat olive oil in a large skillet on medium heat. Put in shallot and garlic, and cook for about 2 minutes until it smells good
In the same skillet, add chopped mushroom stems and spinach cooking until spinach is wilted, for around 3-4 minutes.
Turn off the heat; add crumbled feta cheese to this mixture. Salt and pepper to taste.
Mushroom caps filled with spinach and feta should be placed on top of it
Bake within a range of 15-20 minutes at preheated oven until soft mushrooms are tender inside while filling is heated.
Serve hot as an appetizer!
