Ingredients:
1.5 lbs beef stew meat, cut into chunks
2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried rosemary
3 cups beef broth
1 cup frozen peas
For the Potato Puree:
4 large potatoes, peeled and quartered
4 tbsp butter
1/2 cup milk
Salt and pepper to taste
Instructions:
In a huge pot, heat olive oil over medium-high intensity. Add the beef stew meat and brown on all sides, around 5 minutes.
Add the diced onion, minced garlic, carrots, and celery to the pot. Season with salt, pepper, thyme, and rosemary. Cook for another 5 minutes, stirring occasionally.
Pour the broth over it and heat it to boiling point. Reduce the heat or flame to low, put a lid on it, and simmer thoroughly for 1.5-2 hours, until the ingredients are tasty and the texture is right.
Meanwhile, prepare the mashed potatoes. Heat up the stripped and quartered potatoes in a huge pot of water until fork-delicate, around 15-20 minutes. Channel the potatoes and return them to the pot.
Add spread and milk to the potatoes, and squash until smooth and rich. Season with salt and pepper to taste.
When the meat stew is cooked, mix in the frozen peas and cook for an additional 5 minutes.
