Ingredients:
1 lb pork shoulder, cut into bite-sized pieces
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, chopped
1 can diced tomatoes
2 cups beef or chicken broth
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
1 cup uncooked pasta (such as penne or rotini)
Fresh parsley, chopped (for garnish)
Instructions:
In a huge pot or Dutch stove, heat some oil over medium-high intensity. Add the pork pieces and brown on all sides, around 5 minutes.
Add the onion, garlic, carrots, celery, and red ringer pepper to the pot. Cook, blending at times, until the vegetables start to mellow, around 5 minutes.
Add the diced tomatoes, stock, tomato paste, thyme, oregano, salt and pepper. Bring the mixture to a boil, then reduce the heat or flame to low, cover and simmer for about 60 minutes.
While the stew is simmering, cook the pasta according to the instructions. Channel and put away.
When the pork is delicate, mix in the cooked pasta and let it stew for 10 extra minutes.
