Spicy Chickpea Wraps

Ingredients:

1 can of chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper

Salt and pepper to taste

4 whole wheat wraps

1/2 cup Greek yogurt

1/4 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup chopped fresh cilantro

Juice of 1/2 lemon

Instructions:

In a large skillet heat olive oil over medium heat. Add chickpeas and season with cumin paprika cayenne pepper salt and pepper. Cook for 5-7 minutes. The chickpeas should be slightly browned. They will be crispy.

In small bowl mix together Greek yogurt, cucumber red onion cilantro and lemon juice.

Warm the wraps. Use a dry skillet. Microwave them for 20 seconds.

To assemble the wraps spread spoonful of Greek yogurt mixture on each wrap. Top with spicy chickpeas. Fold in the sides of wrap
