Greek Salad

Dive into a classical Greek Salad – a refreshing Mediterranean confluence of vegetables, feta cheese, olives and piquant dressing. This salad is based upon fresh romaine lettuce or mixed greens for added crunchiness and refreshment. This Greek Salad may be served as it is with chill for a cool side dish or alternatively as an appetizing light main course. It’s perfect for summer parties, picnics and can be taken with meat grills to bring the Mediterranean Sea closer to each bite.

Ingredients:

1 cucumber, diced

2 tomatoes, diced

1 red onion, thinly sliced

1/2 cup kalamata olives, pitted

1/2 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Instructions:

Combine the tomatoes, red onion, kalamata olives, and diced cucumber in a big bowl.

Whisk together red wine vinegar, dried oregano leaves, olive oil salt and pepper in small bowl.

Toss the vegetables with the dressing and combine well.

Sprinkle crumbled feta cheese on top of it gently mix it with the vegetables.

For immediate serving or refrigerate it for about 30 minutes to allow flavors to mingle before serving.
