Potato Puree with Fried Meatballs

Ingredients:

4 medium potatoes, peeled and chopped

1/2 cup milk

Salt and pepper to taste

1 lb ground beef

1 small onion, diced

1/4 cup breadcrumbs

1 egg

1/4 cup chopped fresh parsley

2 cloves of garlic, minced

2 tbsp olive oil

Instructions:

Boil water in a large pot. Put the chopped potatoes and simmer until done for about 15-20 minutes. Discard the water and place the potatoes back into the pot.

Pour the milk, salt and pepper into the pot with the potatoes. When the potatoes are cooked, mash them until the mixture is smooth and creamy. undefined

In a large mixing bowl, mix the ground beef, chopped onion, bread crumbs, egg, parsley, garlic, salt, and pepper. undefined

Divide the meat mixture into small round balls or meatballs.

Warm a skillet over medium heat and add olive oil. Finally, incorporate the meatballs and stir fry for about 10-12 minutes until all the sides turn brown and the meat is thoroughly cooked.

Ladle the potato puree onto plates and place the fried meatballs on top of it.
